The carne salada Rustic flavours revisited for gourmet dishes. The Alto Garda and Ledro cuisine has always used till today a large variety of meats, cold cuts and products of excellent quality such as the luganega sausage and the carne salada. The first historical reference to the last mentioned dish dates back to 1700. A peculiar specialty of the area between Arco, Varone and Tenno, basically it’s the rump of local veal beef subjected to a special process that makes it aromatic at the right point. Very low in fat, it is suitable to be eaten raw and thinly sliced as an appetizer, or accompanied by beans, and seasoned with extra virgin olive oil, salt and pepper.

The “vino santo” This wine owes its particular name to its production process: the Nosiola grapes are left to dry on special wooden racks, called “arele”, up to their crushing period, which is carried out during the Settimana Santa (Holy Week). Distillates and grappa From the vinasses, herbs and mixed berries, a precious elixir to be tasted with friends. The good habits of the past have taught us not to waste anything: distilling the vinasse of each variety of grapes, we obtain different kinds of Grappa of various intensities (such as Moscato Giallo - Yellow Muscatel) or the milder ones (from Nosiola, Schiava, Teroldego, Marzemino and other varieties of grapes). And not only that: for lovers of particular tastes, there are many types of Grappa flavored with various herbs, wild berries and dried roots (rue, gentian, juniper and asperula) or berries (blueberries, raspberries and wild strawberries) and absolutely we must mention the good spirits made with fruits such as plums of Dro, apricots and pears.
